According to one of our old customs, there could not be a festival without traditional food, and vice versa.
In the Smell of Dalmatia, aromas and tastes, customs and those small rituals that accompanied our holidays as well as songs and proverbs, interesting facts and information related to our traditional diet.
They often retain dialectal expressions, of course only in the part related to culinary habits, before it dies out and an ancient culture that developed there over the centuries is not erased with it.
If all this is in some way an expression of the "soul" of a nation's cuisine, the recipes represent its "body" in a more prosaic way.
With reason, Enzo Bettiza says that "everything testifies to the greedy and obsessive passion for the table that always placed the kitchen at the center of the family universe, whether in bourgeois or merchant families" ... and the families of all Dalmatians who were bonkulovics and of good pošadji (gourmets)!
