Evica Mratinić: Quince (2nd edition)

Quine, like most apples, is an old fruit species. According to Kandole, it has been cultivated for over four thousand years, never as a main crop, but more often as a side crop. It is assumed that it originated from the Caucasus, from where it spread to the east and south (to Asia Minor), and from there to ancient Greece. From Greece, quince was brought to Rome (before the beginning of our era) and then to other European countries. Quince fruits are rarely used for fresh consumption, but most often processed into sweets, compotes, jellies, jams and juices. The reason for this should be sought in the taste and chemical composition of the fruit. Quince fruits have a tart sour taste (due to the content of a larger amount of tannins) and greater firmness with a lot of stone cells (which also indicates a higher content of cellulose). The manual contains the morphology and ecology of quince, its physiology and description of varieties, protection of quince from diseases and pests, harvesting and preservation of fruits, and more.
