Pollan Michael

Summary

Michael Pollan: In Defense of Food

The author, a respected journalist and one of the biggest critics of American food policy, claims that most of what we eat today (products of the food industry that we buy in stores) is not food, just as the way we often eat today (on the go, in cars, in front of the TV) is not actually eating. In the first part of the book, the author analyzes the connection between the food industry, nutrition and the media, and concludes that the nutritional advice we have received in the last fifty years has not helped us become healthier, but has made us sicker and fatter. The author analyzes this relationship between modern eating habits (the consumption of industrially processed and prepared food), i.e. the "Western way of eating", and the increasing number of patients and deaths from "Western" diseases, such as coronary heart disease, stroke and cancer. In the third, last part of the book, the author sets out several dozen dietary rules aimed not only at improving health but also at increasing the pleasure of eating. These rules are not the usual nutritional rules, but rather serve as guidelines for thinking about the choice of food, and the author summarized the basic guidelines of a healthy diet in three short sentences: Eat food. Not too much. Mostly herbal.
